One puts whatever one wants--this one puts on butter, but really, the only limits are your palate.

I'm always a bit dubious about combining sourdough bread and sweet toppings, but that might just be me.

They're not particularly sour (that may just be the quality of my starter) but I find they do very nicely with jam, bacon jam, butter, or any manner of things.
