So now I am in the Advanced Cake Decorating Class. There is a sizable difference, of course, between being in the advanced class and being, um, Advanced. I'm mot sure I'll ever be Advanced, because when it comes right down to it I'm not willing to practice my technique until it's perfect. So I'll just have to be cheerily imperfect and deal.
Be that as it may: tonight we molded sugar and decorated it with Royal Icing. My lovely instructor chilled me to the marrow by observing offhandedly that, when her son was married, she made 2000 decorated sugar cubes for the guest tables. It seems almost a shame to drop these things in your tea, but I suppose one manages.
