I have sinned, but having found the error of my ways I hope never more to stray. I just made my first batch of Swiss Meringue Buttercream (SMB for short) and I may never eat anything else again. Farewell, meat, potatoes, and greens! It's me, the butter and the eggwhites, with just enough vanilla to keep it interesting, forever more.
Damn, that's good. I was making to "audition" the stuff for my father's cake next week. Healthy, maybe not: a full batch takes 16 egg whites, 5 cups of butter, four cups of sugar, plus vanilla and salt--but a full batch makes 15 cups, enough to frost three cakes.
Or maybe enough to bathe in. Cause: damn.
