If I learned anything in last night's cake decorating class, it's that frosting flowers add legitimacy to any enterprise. Over the week I made something like fifty blossoms, discarded (ate) most of them, and brought in my dozen best to class. Tonight we learned to make leaves, ferns, and stems, to do a lace stringcourse around the edge of the cake, and little dots around the base and edge. I wasn't crazy about my cake until I added five of my flowers, at which point it all, magically, looked as though I'd meant it to be that way from the very beginning. From now on I'm bringing frosting blossoms with me everywhere, in case I need that retroactive legitimizing.
